Pork Fried Rice with Tomato Sauce recipe
(Khao pad moo)
Ingredient
1 tablespoon cooking oil
3 cloves, crushed garlic
300g (10 oz), finely sliced pork or chicken
1 peeled and diced onion
2 tablespoons fish sauce (nam pla)
3 tablespoons canned tomato purče
750g (1/2 lb, 4 cups) cook rice
Ground white peper to taste
Granish
1 sliced into rounds cucumber
4 spring onions (scallions)
1 sprig Coriander (cilantro) leaves (optional)
1 lemon (optional)Preparation
Heat oil and brown garlic. Add pork or chicken and cook for about 3 minutes.
Add onion, fish sauce and tomato purče.
Stir well, adding a little water and oil if the mixture becomes to dry.Turn up heat.
When mixture is cooked after about 3 minutes more, add rice and cook for a further 3 minutes. Season to taste with peper.
Serve
in a large dish, garished with cucumber rounds and spring onions. If disired, springkle with coriander leaves. Squeeze lemon juice over the rice if you like it sour.
