Thai soups are becoming very popular abroad as most of them are easy to make and healthy to eat. Thai soups are made with either water or coconut milk as the base. Some soups are spicy such as Hot and Sour Prawn Soup which combines many Thai flavours. Other soups are not spicy, such as Clear Soup with Minced Pork, and are a good choice when the other dishes being eaten are spicy. Another popular soup is Chicken in Coconut Milk Soup which is a thick, creamy soup. Soups are eaten as part of a main meal and will be one of several dishes at any meal. However, at home you may want to serve the soup as a starter as many people are not used to eating soup along with rice. |

Mussaman beef curry Gaeng mussaman This is a spicy Southern Thai curry with Islamic origins. Portugues traders brought spices such as turmeric, cinamon, cumin, cloves and nutmeg from the Middle East and India to the sout coast of Thailand and the Gulf of Siam at the same time as chilli, and this recipe combines these dry spices with Thai sweet, sour and saly tastes. I use shin or topside of beef because the curry needs to be boiled for up to four hours.

Green chicken curry Gaeng khiao wan gai A favorite dish in thai restaurants around the world, geang khiao wan gai means "green sweet curry", the sweetness deriving from the coconut milk and palm sugar. It is also deliciously hot and aromatic thanks to the green chilli, peppercorns, kaffir lime leaves, and sweet basil, and salty through the shrimp paste and fish sauce.

Chicken and coconut soup Tom kha gai This dish balandces the sweetness of coconut milk and fragrance of galangal, kaffir lime leaves and lemongrass, with the salty fish sauce and the sour taste of lime juice. The fried chillies add a smoky flavor as well as texture, colour and heat, but not so much that it overwhelms the soup.
