  Morning Glory  Recipe  
  (phad phak boong)  
 
 phad phak boong
   This is a delicious dish and is often cooked as a show piece in some restaurants. Is is normally cooked very fast and furiously over a high heat and then in some establishments,a waiter will run over to the other side of the road while the cook stands with his back to the road. The cook will then throw the contents of his wok over his head, over the road and it is caught (or not!) on a plate by the waiter.
Ingredient
    700g (81/2 cups, 1 lb 6 oz) morning glory or spinach
    60mls (4 tablespoons) oil
    120mls (1/2 cup, 4 fl oz) chicken stock or water
    9 cloves of garlic - chopped
    10 small green and red chillies - smashed
    
Sauce
    120 mls (1/2 cup, 4 fl oz) soya bean paste
    10 g (1 tablespoon) sugar
    75 ml (5 tablespoons) oyster sauce
    1 teaspoon ground black peper
Preparation
Put all the ingredients except the oil into a bowl. Put the oil into a wok and when it is hot and all the ingredients. Stir-fry quickly for 2-3 minutes until the morning glory or spinach is cook.

Mild
Serve: 4
