| This is a delicious dish and is often cooked as a show piece in some restaurants. Is is normally cooked very fast and furiously over a high heat and then in some establishments,a waiter will run over to the other side of the road while the cook stands with his back to the road. The cook will then throw the contents of his wok over his head, over the road and it is caught (or not!) on a plate by the waiter. |

| 700g (81/2 cups, 1 lb 6 oz) morning glory or spinach |
| 60mls (4 tablespoons) oil |
| 120mls (1/2 cup, 4 fl oz) chicken stock or water |
| 9 cloves of garlic - chopped |
| 10 small green and red chillies - smashed |
Sauce |
| 120 mls (1/2 cup, 4 fl oz) soya bean paste |
| 10 g (1 tablespoon) sugar |
| 75 ml (5 tablespoons) oyster sauce |
| 1 teaspoon ground black peper |
| Preparation |
| Put all the ingredients except the oil into a bowl. Put the oil into a wok and when it is hot and all the ingredients. Stir-fry quickly for 2-3 minutes until the morning glory or spinach is cook. |
