Made from rice flour, these white rice noodles are available fresh from the market and supermarket. The thick and thin types differ only in the way they have been cut abroad or narrow). They are relatively bland on their own and they readily take on the flavour of the gravy or soup they are cooked in. These noodles have been pre-oiled to prevent them from sticking. Blanch lightly to remove excess oil if preferred, although this is not necessary. |
